Turkey Pie Recipes

Pie is one of mankind’s better inventions. Meat and vegetables, all wrapped up in pastry. What’s more, pies are actually really easy to cook. Here are a couple of great turkey recipes for you to try out at home.

Turkey and Red Pepper Pie (Serves 4)

Pre-heat the oven to 200°C/180°C fan oven/gas mark 6. Dice up 3 boneless, skinless turkey breasts. Heating2tbsp of vegetable oil in a frying pan then add a small, chopped onion and fry until browned. Throw in the turkey and stir, cooking for about 5 minutes. Add 175g/60z broccoli, cut into small florets and a seeded and sliced red pepper. Continue to fry for another 8-10 minutes. Once everything is just cooked, season, then leave to cool.

 

For the next bit you’ll need a 425gpack of ready-rolled puff pastry (with 2 sheets).Lay out the first sheet of pre-rolled pastry on a dampened baking sheet. This will be the pie base. Spoon the turkey and vegetables mixture over the pastry, keeping the mixture an inch/2.5cm away from the edge of the sheet. Dot blobs of ready-made cheese and chive dip all over. Brush the edges of the pastry with water and place the other pastry sheet over the top. Fold the edges of the lower pastry sheet over the top one and press it down to seal the pie. Slash the top of the pie lightly.

Glaze the top of the pie by brushing a beaten egg over it. Place in the oven for 25-30 minutes. Remove once the pastry is puffed and golden.

Turkey and Stilton Pie (Serves 4)

For this pie, you’ll need to preheat the oven to 190°C/170°C fan over /gas mark 5 and place a baking tray in the oven to warm up. Using a large saucepan heat up 1 tbsp of olive oil and add three diced turkey breasts. After about 5 minutes, once the turkey is browned on all sides, put in 125g broccoli, cut into very small florets and continue to cook for a further 2 minutes, stirring constantly. Pour a 400g can of Stilton and broccoli soup into the pan, stirring in the broccoli and turkey. Take the pan off the heat and spoon your mixture into a deep pie dish.

Roll out 300g of puff pastry over a lightly floured surface until 5mm thick and wide enough to easily cover the pie dish. Dampen the rim of the pie dish and lay the pastry over the top, pressing down the edges to seal and trimming away the excess pastry. These trimmings can be used to make decorations for the surface of the pie. Make light slashes in the surface of the pastry.

Glaze the top of the pie with a beaten egg and scatter flakes of sea salt over the top. Put the pie dish on the pre-heated baking tray and cook for 30-35 minutes, removing when the pastry is puffed and golden.
